The palate begins with a smooth texture that expands into a rich, velvety mouthfeel. Strong sweetness from berry jam and dried fruits, caramel and chocolate, with a full-bodied finish. Slight sulfur notes, herbal tannins, and woody bitterness balance the sweetness well, leaving a long, harmonious aftertaste. [Good/Very Good] Released this spring, this is the Glenfarclas 1987, 27-year-old official family cask. The aroma and flavor are strongly influenced by sherry, with a diverse range of notes including berry jam, black sugar, caramel, chocolate, balsamic vinegar, and herbs. Unfortunately, a sulphuric character was noticeable both in aroma and flavor. That said, the overall experience is more than compensated by its rich diversity of aromas and flavors. It's a concentrated, satisfying sherry-malt with good balance between sweetness and bitterness. While a neutral sherry cask may be more approachable, I find that whiskies like this—with some negative elements but also a rich array of charms—are more enjoyable.
