On the palate, sherry is dominant, with plum jam, balsamic vinegar, a grain note from the back, some sulfur, a sticky sweetness, and the finish is unexpectedly short. 【Good】 A new release from Signatory's Un-Chillfiltered Collection, Glenlivet 1998, aged for 17 years. With the deep color typical of a first-fill sherry cask, the initial impression is that sherry dominates overall. There's a noticeable nuance of balsamic vinegar-like acidity and sulfur-related sulfurous elements. The original spirit centered on grains and the nuances from the sherry cask haven't yet fully integrated, so at this point, it doesn't feel extremely delicious.
