I don't know if it's due to its organic nature, but this was a good recent Springbank. Springbank SPRINGBANK 12yo OB GREEN 46% ・Aroma: Strong lemongrass, fresh lemon, tender leaves, komatsuna (mustard spinach), freshly picked sour strawberries with their stems, a robust young barley note, fresh bread dough, vanilla, peat from the background is clearly present, slightly tar-like, a strong perilla oil note. Initially fresh and sour, but over time it develops into a rich fruity nuance reminiscent of apricot jam. ・Flavor: Mild mouthfeel, lemongrass, new tatami mats, faint loquat, salted strawberry daifuku, a slightly chewy texture, sweetness and acidity of fresh fruits, strongly briny, the umami of barley gradually spreads, slightly oaky, some roughness and green grassy bitterness are also detected, strong peat with tar notes, medium-bodied. ・Aftertaste: Lemongrass and brininess, with tar and peat lingering for a long time. ・Watering Down: Generally it feels expansive as is, but the peat character becomes more pronounced. ・Overall Evaluation: A recent Springbank, but while it differs from older vintages, the fresh strawberry notes and brininess are clearly present. As expected for recent Springbank releases, the peat is somewhat stronger. 【Good/Very Good】 Recently released from Springbank, the 12 Year Old Official "GREEN". I drank it at Yurakucho and liked it, so I bought one myself to try. As mentioned above, I could feel both the traditional Springbank character and the modern Springbank style. Personally, I don't think it's because it's organic, but the freshness without much greenness suggests it might be a special cask selection. I think the matured fruitiness that becomes noticeable over time might strengthen further with aging, and I felt a hint of complexity from the slight roughness and bitterness, so I bought multiple bottles. I'm currently drinking one, but since the changes over time seem promising, I'll take my time to enjoy it. As mentioned in my circle, I also think that the changes after opening can give a glimpse of aging potential.
