Sherry barrels are not commonly heard of, so it might be more natural to interpret 'cask' here as the barrel type. From the aroma, elements like plum and dried fruits, characteristic of Sherry Cask maturation, felt quite strong. However, the barley note with youthfulness was even more pronounced. Upon tasting, compared to the aroma, there's less immaturity and Sherry characteristics aren't dominant. There's a sweetness of citrus and honey, with oak-derived tannins deepening the flavor. As mentioned earlier, there might be differences in cask size, which could explain why, compared to Bourbon barrels, this 15-year-old maturation has a slightly immature finish.
