The aroma features a pleasant, concentrated old sherry with dried fruits like raisins with stems, intense red fruit jam notes, black sugar, mature mirin, a slightly meaty volume, herbs and spices, slightly charred barley, and a strong earthy character reminiscent of leaf mold and leather, with a deep, robust old peat.
When tasted, it spreads smoothly and powerfully beyond its proof strength, with a rich, concentrated old sherry character, berry-like jams, and stemmed concentrated grapes. The intense sweetness of these elements is balanced by tannins and herbal astringency, with a slightly meaty umami, earthy leaf mold notes, leather, old peat, full-bodied, and a rich, long finish.

This Glenlivet 1961, bottled at full proof by GM for SESTANTE in the 80s.
The overall character is dominated by an extremely rich old sherry nuance, but as the tasting notes grew lengthy, it's clear this is an intensely complex aroma.
Particularly notable are the rich, sweet nuances of fruit jams and black sugar, balanced by leather and herbs, combined with an earthy quality reminiscent of leaf mold and old peat. This is a rare aroma in modern malts, with a sense of concentration and volume in almost every element.
Additionally, the meaty quality sensed in this bottle seems to be a transformed version of sulfuric notes. It's likely that at bottling time, the aroma had a significant sulfuric character.
As a result of this transformation, it seems that despite being so well-rounded within the bottle, the malt has become remarkably thick and voluminous.
