There was a clear and attractive strawberry jam character. Springbank SPRINGBANK 1965-1999 34yo MURRAY MCDAVID #MM580 46% Fresh Sherry Cask The aroma is very floral and seductive, with a rich old sherry, strong strawberry jam, violets, antique furniture, herbs, leather, and a subtle earthy peat in the background. On the palate, there is a strong strawberry jam character with a pleasant balance of sweetness and acidity, a slightly firm tannin, leathery notes with oiliness, and a long finish that is slightly bitter but also intoxicating. [Very Good] This is Springbank 1965 bottled by Murray McDavid in 1999, aged for 34 years. As expected from a Springbank sherry cask from the 1960s, it has an outstanding sherry aroma with a strong strawberry jam character. The aroma also contains floral elements completely different from perfume, and it feels luxurious with woody notes and herbs, adding a seductive charm that is quite captivating. The flavor has strong woody characteristics and tannins, despite the water addition, with a slight over-ripeness that cannot be denied but does not significantly impair the intoxicating experience. As with the aroma, it has the expected complexity and depth, and all the desired elements of this Springbank specification are well-packed.
