Even after 25 years since bottling, it remained powerful and lively. Highland Park HIGHLAND PARK 1970-1989 19yo GM for Sestante 52.9% The aroma has a good old character, strong barley notes, cinnamon, ginger, apricot and strawberry jam, honey, a faint peat reminiscent of burnt grass, and expands into a rich and fragrant profile. A good old character with the sweetness of apricot jam, savory barley depth, a slight grassy bitterness like chewing green herbs, followed by peat, rich and spicy, with a long finish. [Good/Very Good] This is a high-proof Highland Park 1970, bottled by GM for Sestante in 1989. After 25 years since bottling, it certainly has an old character but maintains a strong barley base with a concentrated jam-like richness. Slight grassy bitterness was noticeable, but the characteristic peat and rich sweetness with a long finish left a good impression. These high-proof expressions retain their body even after time has passed. It had the Sestante-like flavor and sufficient drinking satisfaction. Actually, it was delicious, but I felt like I couldn't fully experience its true value in this tasting. I had planned to drink it after some time had passed since opening, thinking the unity, complexity, and fruitiness would strengthen, but it disappeared faster than expected, and I ended up missing the chance.
