A sharp and cool Caol Ila. Caol Ila CAOL ILA 1975-2005 29yo High Spirits' Collection 49.5% one of 211 bottles The aroma is cool, with chlorine or metallic notes, grapefruit and a touch of cotton, green apple, faint lychee, dry wheat sensations, and sharp peat. When drinking, it starts smoothly but gradually reveals its stimulation: citrus, chewy wheat notes, pleasant sweetness and fresh citrus acidity, sharp and strong peat, slightly oily with a long finish. [Good/Very Good] High Spirits bottled Caol Ila 1975, aged for 29 years in 2005. From the aroma, I sensed metallic and chlorinated notes common to Ardbeg. The grapefruit-like quality, along with its cottony nuances and lychee-like hints, likely emerged from extended aging and bottle maturation. A dry wheat sensation and a sharp smoky peat dominance were noticeable, giving an overall very cool impression. When tasted, it felt more straightforward than the aroma, with less pronounced metallic notes and centered around fresh citrus, concentrated wheat sensations, and strong peat. The balance of sweetness and acidity was well executed. Indeed, the peat has sharpness and retains a cool nuance. The whisky feels straightforward with good clarity, not overly influenced by the cask. With a significant aging period and over ten years of bottle maturation, it gives an impression of increasing complexity.
