The aroma features prunes, raisins, with peach emerging from the depth, chocolate cake, rich woodiness, and herbs. On the palate, it starts with a smooth mouthfeel, expanding into ripe plum jam, concentrated peach, tropical notes, a slightly medicinal chemical sensation, a dense sweetness with a balanced astringency, and a touch of bitterness along with the chemical sensation, leaving a fruity finish. This Lochside 1981, bottled in 2005 by GM Rare Old, aged for approximately 24 years. Although not labeled explicitly, the aroma and flavor suggest it originates from a sherry cask, with concentrated fruits. At the same time, the characteristic peach-like notes and medicinal chemical sensation typical of Lochside 1981 were present. However, in this bottle, the sherry characteristics seem to mask the aroma, while the flavor strongly reflects these elements. This is a malt where the cask and original spirit's fruitiness are simultaneously present, with a well-balanced sweetness and astringency. Thanks to the water addition, the slight bitterness was not too pronounced. In Lochside 1981, regardless of bottler, bottling period, or cask type, these peach-like notes, tropical fruits, and chemical elements are consistently present. It is likely that these characteristics are common to all original spirits of Lochside from this period, rather than being limited to specific casks with particular nuances.
