Aultmore 1989-2007 18 Year Old The Whisky Exchange 57.6%
Bottle #オルトモア(AULTMORE)
This is entirely a sulfur-free sherry character, I think.
Aultmore AULTMORE 1989-2007 18yo The Whisky Exchange 57.6% one of 395 bottles
The aroma is a sweet good sherry, prunes, bitter chocolate and coffee, black sugar, herbs and clove, meaty, depth of barley, rich and complex.
When drinking it expands from a smooth mouthfeel to a fragrant concentrated fruits, bitter chocolate, rich body with strong sweetness, good astringency of herbs, long finish.
[Good/Very Good]
The Aultmore 1989, 18 year old bottled by The Whisky Exchange in 2007.
Although not mentioned, the color is also dark and I think it's a solid sherry cask.
The aroma and flavor are covered with a strong sherry character, with sticky fruits like prunes, bitter chocolate, and spices such as herbs and clove, making it complex and rich.
The balance of strong sweetness and astringency was good, with meaty nuances deepening the flavor.
This meatiness is now a positive nuance, but I feel it might have been sulfury at bottling time.
The master agreed, and although 9 years have passed since bottling, he realized that some types can be quite sulfur-free.
As the positive aspects of sulfury elements often change, I think it's important to gain experience to distinguish between types that are easy to dissipate and those that aren't at an early stage.
