Upon drinking, it is mellow with the sweetness and acidity of lemon juice, vanilla, a pronounced barley character, and a strong smoky peat that lingers from the mid-palate to the finish. [Good/Very Good] A water-added Jura 1989 peated variant bottled by Signatory for the Limburg Whisky Fair, part of their Un-Chillfiltered Collection. The bourbon cask influence is evident in the green apple and vanilla notes, both in aroma and flavor, though the cask character is not overly intense. The barley character remains distinct. Additionally, the earthy and peaty notes that emerged from the depths of the aroma become more pronounced from the mid-palate to the finish. As a water-added whisky with considerable aging, it leaves a generally mellow impression, with the strong peatiness seeming to blend seamlessly, resulting in a quite enjoyable Jura.
