It's a whisky that becomes even better with time. Aultmore AULTMORE 1990-2016 25yo DOUGLAS LAING XTRA OLD PARTICULAR #11066 54.4% One of 302 bottles, Sherry Butt The aroma is rich sherry, sweet-sour herbal liqueur and balsamic vinegar, Shaoxing wine, dried fruits, bitter chocolate, tiramisu, rich. When drinking, it starts with a smooth mouthfeel and expands into a fragrant depth of plum jam, dried fruits, Shaoxing wine, coffee, bitter chocolate, sulfur, barbecue meat meets, rich sweetness and astringent herbal liqueur, with a rich and long finish. [Good/Very Good] Equivalent to previous Old & Rare releases, Douglas Laing's premium range: Extra Old Particulars brings us Aultmore 1990, 25-year-old maturation. The color is deep, and the sherry character is strong from the start. Herbal liqueur, balsamic vinegar, Shaoxing wine, and bitter chocolate are among the more abundant flavor profiles of the vintage-rich sherries that were slightly more common in earlier years. Among these, the strong tiramisu-like notes in the aroma and the barbecue-like meets flavor with a slightly sulfurous element in the taste were particularly impressive. Primarily from sherry casks, this malt has a very diverse aroma with depth and richness. While it's impossible to identify the distillery blind, I'm confident that the sulfurous elements will deepen and become more delicious with aging. It's already very good to drink now, but considering its potential for development, it's a bottle worth buying and aging. #Aultmore (AULTMORE)
