It had a plain cask style flavor typical of Springbank. Springbank SPRINGBANK 1991-2000 8yo Murray McDavid #MM1829 46% REFILL SHERRY CASK The aroma is somewhat closed at first for a Springbank with water, but it slowly expands, showing citrus, dry grains, young leaves, and a sense of concentration. Upon drinking, it starts with a gentle mouthfeel, expanding into citrus and dry grains, with a fresh sweetness, acidity, and saltiness. The finish is not long but clean. 【Good/Very Good】 This Springbank 1991 was bottled by Murray McDavid in 2000, matured for 8 years at 46% ABV. In both aroma and flavor, there is a citrusy freshness along with dry grains and a green leaf-like plantiness, giving a typical briny character. Although Springbank tends to have a stronger peatiness from the late 90s onwards, this vintage does not show that. Despite being labeled as a refill sherry cask, it seems close to a plain cask with little barrel influence, offering a clean and unobtrusive aroma. Given the minimal influence of the cask and only 8 years of maturation, it would normally be considered quite young. However, it is believed that the addition of water and over 15 years of aging post-bottling have brought it to its optimal drinking condition.
