This is a common flavor profile found in recent bourbon cask releases, but it has a solid and stable character. Aultmore AULTMORE 1991-2014 22yo A.D.RATTRAY #6087 57.5%, one of 263 bottles, Bourbon Hogshead The nose features green apple, citrus, vanilla, cinnamon, a touch of custard, and a strong malty character with some raw oak notes. On the palate, it offers citrusy sweetness with a light honeyed flavor, a gentle malty umami, and some woody bitterness from the oak that adds depth to the flavor. [Good] New release from Dewar & Rattray, Aultmore 1991, aged for 22 years. The nose has a lot of the typical components found in younger bourbon cask-matured malts, such as green apple, citrus, and vanilla. It also has a reasonable maltiness with some raw oak characteristics that give it a slightly new barrel-like feel. On the palate, as expected from a bourbon cask release, it has a sweet flavor with citrus and honey notes, along with the umami of the malt. While the slightly raw woody character has some bitterness, it adds depth to the flavor and is not a bad thing.
