The aroma is sweet and rich with sherry notes, plum jam, faint prunes, dried fruits, bitter chocolate, a subtle celery-like herbiness, and some peat in the background. The taste starts with a smooth mouthfeel, expanding into a rich and powerful sherry character similar to the aroma. A strong jammy sweetness is balanced by a firm herbal bitterness, and the finish is unexpectedly long and robust with peatiness for a Mortlach.

This is the 22-year-old Mortlach bottled by Hunter Laing as Old & Rare in 2014. Despite the 22-year aging in a sherry butt, it's clearly not an outturn (possibly shared casks). There were several such shared cask options available during a tasting at Hunter Laing's office this year.
Regarding the core content, as expected from the high-end range Old & Rare, it showcased a depth and diversity of sherry character that stands out even in recent releases. Both aroma and flavor are rich, complex, and varied, but particularly notable is how the diverse jammy sweetness is balanced by another layer of diverse herbal bitterness, creating significant depth. Additionally, the unexpected peatiness was surprising; however, this became more pronounced after two months of aging post-opening compared to the initial tasting.
When thinking of sherry-aged Mortlach, there was a period when sulfuric notes were common rather than the more recent trend of bourbon cask dominance. However, this bottle lacks such negative elements despite being sherry-aged, conveying a complex and flavorful character that feels distinctly Hunter Laing's own.
