A very well-made Caol Ila in a sherry cask, with rare specifications. It's quite delicious. Caol Ila 1993 21yo THE SCOTCH MALT WHISKY SOCIETY '53.216' 60.6% One of 597 bottles, Refill Sherry Butt The aroma is warm and pleasant sherry notes, ripe oranges, plums, caramelized nuts, a faint saltiness, and a solid peatiness with slightly charred barley, fireplace warmth, rich, and when drinking it starts soft but expands into a spicy, aromatic depth. Slightly powdery, concentrated citrus, sweetness of plum jam, umami reminiscent of seafood dashi with a slightly meaty depth, barley notes beneath the strong peat. Long finish. [Very Good] The SMWS 53 series Caol Ila 1993, a new release aged for 21 years. (※SMWS distillery code list here) The aroma has a good sherry character that covers the entire profile, with ripe fruits and caramelized nuts, a faint saltiness typical of Caol Ila, and a smoky feel like being by a fireplace. Upon tasting, it's surprisingly mellow for the Society's style, expanding smoothly and aromatically. I detected my favorite Caol Ila characteristics: a powdery, concentrated citrus note and jam-like sweetness from the sherry cask aging. The umami depth reminiscent of seafood and meat was impressive. Naturally, the peatiness characteristic of an Islay cask strength is also strongly present. While sherry-aged Caol Ila is rare, the quality of the sherry character here is exceptional. Combined with the distinctive charm of Caol Ila, and considering its reasonable price, there's no choice but to buy it. However, when I looked for it immediately... despite expecting a large stock, it was already sold out. Obviously, everyone must have found it delicious. Quite regrettable. #Caol Ila (CAOL ILA)
