On the palate, it has a soft mouthfeel with more pronounced sherry characteristics than the aroma, featuring nuttiness, orange sweetness, honeyed richness, a full-bodied texture, gentle barley notes, and a peaty finish. [Good/Very Good] This is a new release from Vintage Malt's Cooper's Choice, Highland Park 1995 aged for 20 years. After aging in American oak casks for 20 years, it was finished in sherry casks. The water addition works well, giving the whisky a rounded and cohesive feel with minimal artificial flavoring often found in finished products. The sherry character adds depth to the taste, giving it a slightly sherry-infused vatting feel. The peat is well-balanced for Highland Park, and the rich, full-bodied flavor was impressive despite the alcohol content.
