The aroma features a refined bourbon character with orange, apple pie, vanilla, a touch of coconut, and rich oak. On the palate, it delivers a smooth entry for its high ABV, unfolding with orange oil, vanilla, a subtle peach-like nuance, balanced sweetness and acidity, honeyed fruity sweetness, and a tightening oak finish. This is an official single cask bottling for Beija Flor in Italy, aged 11 years from 2005. While relatively short for a non-peated whisky, it was well-aged in a fast-maturing bourbon barrel. The aroma combines classic bourbon cask notes like vanilla, orange, coconut, and oak with a delicate cinnamon-tinged apple pie nuance. The palate similarly highlights bourbon cask characteristics, offering a more diverse profile than the aroma with Tomatin's signature peachy fruitiness. The honeyed sweetness, good acidity, and oak structure were well-balanced. Notably, the typical rough woody notes often found in early-maturing bourbon casks were almost absent, resulting in a highly refined malt.
