On the palate, it begins with a smooth mouthfeel that expands into spicy, aromatic layers of sherry character, prunes, chocolate, caramel, and a pronounced sweetness that is never cloying. The finish is rounded with a gentle tannin and a clean, satisfying aftertaste. This official TOMATIN 2005 was bottled for Public Bar Islands in Ibaraki, aged approximately 11 years in a first-fill Oloroso sherry butt. Despite the relatively short aging period, it exhibits impressive complexity. The sherry character is present but not overpowering. Typical tropical and chemical notes of TOMATIN are subdued, with stronger impressions of jammy, dried fruit flavors, chocolate, and nuances reminiscent of balsamic vinegar.
