The aroma presents a good sherry character, promising malty notes, and strong peat, each clearly pronounced. Notes of caramel, black sugar, prunes, seafood stock, intense smoke, and a touch of green vegetables and beans. The palate is rich and velvety with caramel, intense sweetness of orange marmalade, a full-bodied texture with pronounced umami from seafood stock and malt, strong peatiness with smoky characteristics. Though not full-bodied, it is powerful with a long finish.

This Kilchoman 2007, bottled by BEIJA FLOR, an Italian bottler recently gaining high praise around me, is a sherry cask matured for 5 years. As expected from its youth, there's a slight greenness, but the good sherry cask influence, youthful and rich maltiness, and strong peat characteristics typical of Islay cask strength are all clearly expressed in both aroma and flavor. It's a young sherry Islay malt that is already quite delicious, but the elements are still distinct and lack a sense of unity. I look forward to bottle aging bringing them together, hoping to taste something more integrated.
