The aroma is strongly reminiscent of katsuobushi dashi and soy sauce, with sherry, dried fruits, raw peated malt, a rich umami of seafood dashi, sherry-like fruitiness, young barley's umami, a slightly damp earthy quality, nuts and beans, with a powerful finish. [Good] Kilchoman official bottling, distilled in 2007, aged for 5 years. The aroma has a strong sherry character, with notes of dried fruits, seafood dashi, and soy sauce. It also has sufficient peatiness typical of Islay. When tasted, the sherry and seafood dashi characteristics are prominent, with a rich barley umami. While some youthfulness is detectable, it is masked by the sherry and peat, making it less noticeable. Although short-aged, overall it has a quite good finish.
