Due to in-bottle aging, it left an impression of being more delicious than previous iterations. KILCHOMAN KILCHOMAN 2008-2013 5yo OB '100% ISLAY SINGLE CASK' #402/2008 61% Bourbon Cask The aroma features citrus, green apple, youthful yet strong barley notes, grassy young leaves, vanilla, cinnamon, root vegetables, sharp and intense peat. Upon tasting, it is stimulating with fresh citrus, faint peach notes, a gentle honey-like sweetness, and tangy citrus acidity. It is firmly briny with strong barley umami, vanilla, sea breeze, and a smoky, sharp peat character. 【Good/Very Good】 This is KILCHOMAN's '100% ISLAY SINGLE CASK' bottling from 2013. It is a 5-year-old bourbon cask whisky distilled in 2008. All production processes for this series were conducted on Islay, using medium-peated malt at 20ppm. The aroma is fresh with citrus, green apple, and young leaf notes, alongside youthful strong barley character and root vegetable undertones. Despite being medium-peated, the peat presence was notably robust. Upon tasting, it exhibits a high-proof-like stimulation and freshness. The sweetness is subtle without feeling artificial, while the brininess is more pronounced in comparison. The young malt's barley umami is clearly present, and the 20ppm peat character asserts itself sharply. A faint peach water-like nuance was detected during tasting, an element not present immediately after bottling. I have no memory of being impressed by KILCHOMAN's new releases from this period, but upon re-tasting, it exceeded expectations. Initially masked by a sense of immaturity, aspects gradually emerged after opening or through in-bottle aging, enhancing its drinkability. Reflecting now, some KILCHOMAN bottles I thought immature a few years ago might have been better appreciated had I tasted them again after some time post-opening.
