The taste is aromatic, with a diverse fruity profile containing faint strawberry jam notes, rich sweetness, pleasant astringency, savory barley depth with bite, and a gradually spreading peat. The finish is rich and long-lasting. 【Good/Very Good】 This Springbank 21 Year Old Official Bottling has been released annually since 2011, and this is the latest release for 2016. While this series is relatively expensive, it gives a strong impression of careful cask selection, and I felt the same this year. Within its diverse vatting, sherry casks have a significant effect, but there are hardly any unpleasant aspects. The aroma and flavor contain a faint Springbank-like strawberry jam nuance typical of sherry casks. Alongside the matured, diverse fruits, a savory barley character with bite remains in balance, and recent Springbank-like seaweed brininess and peat notes are also prominent. I felt this vatting has a well-balanced structure, with complexity and richness, making it very delicious.
