When drinking, the rich sherry character envelops the entire palate, with a dense plum jam sweetness and a pleasant astringency that tightens it up. This is undoubtedly a promising sherry cask Highland Park that will continue to improve. Considering the addition of water, it may reach its full potential relatively quickly.
